Peach Caprese with Balsamic Cherries


Peach Caprese Salad with Balsamic Cherries Ingredients:

• 1 cup cherries (about 22 cherries), pitted and cut into quarters

• 2 tablespoons aged balsamic vinegar or balsamic reduction

• 1 tablespoon olive oil, plus more for drizzling • 1 small shallot, minced

• Kosher salt and freshly ground black pepper • 5 peaches

• One 6-ounce log mozzarella

• 12 fresh basil leaves, cut into chiffonade strips Directions:

1. Combine the cherries, balsamic, oil, shallot and some salt and pepper in a bowl. Let it sit in the fridge for 30 minutes.

2. Cut the peaches in half and remove the pits. Cut lengthwise into slices. Slice the mozzarella 1/2-inch thick.

3. Layer the peaches and mozzarella on a serving plate, alternating one after the other. Spoon the relish over the top, then sprinkle with salt and drizzle with olive oil.
