Potato Dijon Soup

We'll be using a yellow onion, chopped; two leeks, cleaned and sliced (white part only); three ounces of pancetta, diced; six cups of chicken broth; three russet potatoes, peeled and diced; two tablespoons of Dijon mustard; one cup of heavy cream or half-and-half; salt and black pepper, to taste; and fresh chives and/or parsley, chopped, for garnishing.

Then, add the chicken broth and bring the mixture to a boil. Reduce the heat to low and simmer for 20 minutes.

Next, add the diced potatoes and cook for another 10 minutes, or until the potatoes are tender. Stir in the Dijon mustard and heavy cream or half-and-half. Season with salt and black pepper to taste.
