Turkey Meatloaf and Potato Dijon Soup

Hey there, foodies! Today, we're going to learn how to make a delicious Turkey Meatloaf. This recipe is perfect for a cozy dinner with your family or friends. Let's get started!

First, let's gather our ingredients. We'll need 3 cups of chopped yellow onions, 2 tablespoons of good olive oil, 2 teaspoons of kosher salt, 1 teaspoon of freshly ground black pepper, 1 teaspoon of fresh thyme leaves (or 1/2 teaspoon of dried thyme), 3/4 cup of chicken stock, 1 1/2 teaspoons of tomato paste, 5 pounds of ground turkey breast, 1 1/2 cups of plain dry bread crumbs, 3 extra-large eggs, beaten.

Now, let's start cooking! Preheat your oven to 325 degrees Fahrenheit. In a medium sauté pan, sauté the onions in the olive oil over medium heat for about 10 minutes, until they're soft and translucent. Then, add the salt, pepper, thyme, Worcestershire sauce, chicken stock, and tomato paste. Stir everything together and cook for another 2 minutes.

In a large bowl, combine the ground turkey, bread crumbs, and eggs. Mix everything together until it's well combined. Add the onion mixture and mix again. Then, add the ketchup and mix one more time. The mixture should be moist but not too wet.

Now, it's time to shape the meatloaf. Form a rectangular loaf that's about 3 inches high and 12 inches long. Place it on a broiler pan and bake for about 1 hour and 15 minutes, or until the internal temperature reaches 160 degrees Fahrenheit.

And there you have it, a scrumptious Turkey Meatloaf! This recipe is not only delicious but also healthier than traditional meatloaf, as it uses ground turkey instead of beef. I hope you enjoy this meal as much as I do!
