Hey there, fellow foodies! Today, we're going to dive into the world of delicious banana bread. This recipe is not only easy to make, but it's also a great way to use up those overripe bananas that you might otherwise throw away. So, let's get started!First things first, gather your ingredients. You'll need:- 3 very ripe bananas (medium/large)- ½ cup unsalted butter (8 Tbsp), at room temperature- ¾ cup granulated sugar- 2 large eggs, lightly beaten- 1½ cups all-purpose flour- 1 tsp baking soda- ½ tsp salt- ½ tsp vanilla extract- 1 cup walnuts- ½ cup raisinsNow, let's get started on the banana bread. Preheat your oven to 350°F and grease and flour a bread loaf pan (9.25 long x 5.25 wide x 2.75 deep). While the oven is heating up, lightly roast your walnuts on a skillet, stirring continuously to prevent burning. Once they're roasted, coarsely chop them and let them cool. Now, it's time to mix all the ingredients together. In a large mixing bowl, mash the bananas with a fork until they're smooth. Then, add the butter and sugar, and mix well. Next, add the eggs and mix until combined. In a separate bowl, whisk together the flour, baking soda, salt, and vanilla extract. Now, it's time to combine everything. Add the dry ingredients to the wet ingredients and mix until just combined. Don't overmix, or your bread might be tough. Gently fold in the walnuts and raisins.Pour the batter into the prepared loaf pan and bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. And there you have it! A delicious and easy-to-make banana bread that's perfect for any occasion.
