Grilled Chicken Caprese
Ingredients
• 6 boneless, skinless chicken thighs
• 1 tablespoon balsamic vinegar
• 1/2 teaspoon dried oregano
• 2 chopped garlic clove
• salt and pepper
• 1/4 teaspoon chili flakes
• 2 tablespoons olive oil
• 1 1/2 cups grape tomatoes
• 1 cup mozzarella
• 1/3 cup chopped basil
• 2 tablespoons olive oil
• balsamic vinegar
Directions: To a bag add the balsamic, oregano, salt, pepper, chili flakes, garlic, and olive oil. Mix well and add your chicken. Remove as much air as possible and marinate for 4-6 hours. For three salad, combine the tomatoes, mozzarella, basil, salt and olive oil. Let it marinate for 10 minutes. Preheat your grill to a medium heat. Remove the chicken from the bag. Drizzle with the remaining teaspoon of olive oil. Place the fillets on the hot grill and grill until deep grill marks have formed on the first side, 4 to 5 minutes. Flip the chicken and grill until browned on the second side and cooked through, about 3 minutes longer. Place two filets on each plate and divide the salad on top.
