Ham Bone Soup

Ingredients

• 1 tablespoon butter

• 1 large onion diced

• 1 meaty ham bone

• 1 pound Yukon gold potatoes diced, peeling optional

• 3 medium carrots sliced

• 2 ribs celery sliced

• 1 cup frozen corn thawed

• 15 ounces cannellini beans drained and rinsed (white kidney beans) optional • 7 cups chicken broth or water

• 2 bay leaves

• 2 sprigs thyme or 1 teaspoon dried thyme leaves

• ¼ cup fresh parsley

(We added some chopped sugar snap peas into this soup just for some extra nutrition.) Instructions

1. Cook the onion in butter in a small skillet over medium heat until slightly softened. 2. Combine all ingredients in the slow cooker. 3. Cover and cook on high for 6 hours or on low for 9-10 hours.

4. Remove ham bone, bay leaves and thyme stems (if using fresh thyme). 5. Chop meat from the bone and add back into the soup. Stir and serve. #hambonesoup #hambone #soup #fyp #foodie #homecooking #homecooked #cooking #cook
