Homemade Chicken Noodle Soup

Ingredients
• Butter
• Onion, diced
• Carrots, sliced or julienned
• Celery, sliced
• Garlic, minced
• Fresh thyme
• Salt & black pepper
• Chicken stock
• Rotisserie chicken, shredded or chopped
• Pasta (orzo, egg noodles, or small pasta)
• Fresh parsley, chopped
Instructions
1. In a large pot, melt butter over medium heat.
2. Add onion, carrots, and celery. Sauté until softened, about 5–7 minutes.
3. Stir in garlic and thyme; season with salt and pepper. Cook until fragrant, about 30 seconds.
4. Pour in chicken stock and add the rotisserie chicken.
5. Bring to a boil, then add pasta.
6. Reduce to a simmer and cook until pasta is tender.
7. Taste and adjust seasoning.
8. Finish with fresh parsley just before serving.
