Making & Canning Tomato Sauce (9 Quarts) Ingredients
• 25 lbs Tomatoes
• 4 onions diced
• 4 peppers diced
• 24 oz tomato paste
• 2/3 cup sugar
• 1/4 cup salt
• 8 cloves garlic minced
• 4 tsp oregano
• 2 tsp parsley
• 2 tsp basil
• 1 cup lemon juice
• 1/2 tsp citric acid per quart!!!
Directions
1. Preheat oven to 450 degrees. Cut and squeeze out any extra liquid from your tomatoes and place on a baking sheet. Drizzle your tomatoes with some olive oil. Sprinkle the tomatoes with salt, pepper, and ground coriander. Roast for 30 minutes until you see black char on the skins.
2. Puree the tomatoes in a food processor or blender.
3. Add all your ingredients except for lemon juice and citric acid into a stock pot. Let the sauce reduce until desired consistency. 4. Ladle the sauce into the jars, leaving 1/2-inch headspace. Add your lemon juice and citric acid into your jars.
5. We process the quarts for 45 minutes in a hot water canning bath. REMEMBER: Don’t start timing until the water has returned to a boil with the filled jars inside.
