Pickled Sweet Radishes

Pickled Sweet Radishes

• 4 pounds of sliced radishes

• 5 tablespoons of pickling salt

• 4 cups white vinegar

• 4 1/2 cups white sugar

• 2 teaspoons celery seed

• 1 tablespoon allspice

• 2 tablespoons mustard seed

• sliced onion and a clove of garlic for each jar Instructions

1. Wash radishes well. Trim small sliver off each end.

2. Cut radishes into rounds.

3. Bring the pickling solution to a boil.

4. Pack the jars with the onion, garlic, and radish slices leaving 1/2 inch headspace. 5. Pour heated pickling solution into jars, leaving 1/2 inch headspace.

6. If you are short of heated vinegar, just quickly zap some more vinegar with a bit of sweetener in it in microwave, mind surge effect when removing from microwave.

7. Debubble, adjust headspace.

8. Wipe jar rims.

9. Put lids on.

10. Process in a water bath or steam canner.
