Sauteed Purslane

Sauteed Purslane- Purslane looks like a weed but has a surprising amount of health benefits. Grow your own purslane so you can experiment with adding it to your meals. If you have kidney issues, are pregnant, or are nursing, talk to your doctor first.

Ingredients

• 1.5 lbs. purslane leaves and small stems, large and medium stems removed

• 2 tbsp olive oil

• 1 clove garlic minced

• 2 tbsp shallot minced

• salt to taste

• pepper to taste

Instructions

1. Heat oil over medium high heat in a pan.

2. Add everything to the pan and stir constantly until the greens are wilted and the moisture is evaporated.
