Zucchini Cake with Brown Butter Icing

Zucchini Cake with Brown Butter Frosting Ingredients:
• 1 1/2 cups granulated sugar
• 1 cup vegetable oil
• 3 large eggs
• 2 cups all-purpose flour
• 1 teaspoon baking powder
• 1/2 teaspoon salt
• 1 1/2 teaspoons ground cinnamon
• 2 cups shredded zucchini (about 3 medium) • 1 1/2 cups pecans, chopped
Brown Butter Frosting:
• 6 tablespoons butter
• 6 cups powdered sugar
• 1 teaspoon vanilla
• 8 to 10 tablespoons milk
Instructions:
1. Preheat your oven to 350°F (175°C). Grease a 15x10x1 inch pan.
2. Mix Dry Ingredients: In a medium mixing bowl, combine flour, baking powder, salt, and cinnamon. Set aside.
3. Combine Wet Ingredients:In a mixer, blend together sugar, oil, and eggs until smooth. 4. Mix Wet and Dry Ingredients: Gradually add the dry ingredients to the wet mixture until fully incorporated. Add Zucchini and Pecans: Stir in the shredded zucchini and chopped pecans. 5. Spread the batter evenly in the prepared pan. Bake for 30-40 minutes or until a toothpick inserted in the center comes out clean. Let the cake cool completely.
6. Heat a medium-sized saucepan over medium heat. Add the butter and whisk until it turns brown. Add powdered sugar, vanilla, and milk. Stir together until smooth.
