šš§ Crockpot Chicken Parmesan š§š
All the flavors of classic chicken parm⦠but made EASY in the crockpot šš„
Cheesy, saucy, and perfect for those busy nights when you still want something comforting š¤¤

⨠Ingredients (serves 6):
⢠2 lbs chicken breasts
⢠1 (28 oz) can crushed tomatoes
⢠3 tbsp tomato paste
⢠2 shallots, chopped
⢠1/4 cup Italian seasoning
⢠1/2 cup fresh basil leaves
⢠Chili flakes (to taste)
⢠Sea salt & black pepper
⢠1ā2 Parmesan rinds (optional but š„)
⢠1 cup grated Parmesan cheese
⢠1 cup shredded mozzarella or provolone
⢠2 tbsp salted butter
⢠1 cup panko bread crumbs
⢠2 garlic cloves, chopped
⢠Fresh parsley or basil (for garnish)
⢠1 lb cooked spaghetti (for serving)

š„ Directions:
1. Add chicken, crushed tomatoes, tomato paste, shallots, Italian seasoning, basil, chili flakes, salt & pepper to crockpot. Add 1/2 cup water and stir. Drop in Parmesan rinds.
2. Cook on LOW for 3ā4 hours or HIGH for 2 hours.
3. Shred chicken, stir in 1/2 cup Parmesan, then top with mozzarella/provolone. Cook on HIGH 20 minutes until melted.
4. In a skillet, melt butter and toast panko with garlic until golden. Stir in remaining Parmesan.
5. Serve chicken and sauce over spaghetti. Top with crispy Parmesan crumbs and fresh herbs.
