Guinness Pie 🥧


If you’re craving something rich, cozy, and packed with flavor—this Guinness Pie is IT. Tender beef slow-cooked in a deep, savory stout gravy and topped with a golden, flaky crust. Perfect for a weekend meal or feeding a crowd!

đź›’ Ingredients (Serves 6)


For the stew:

• 4 tbsp butter

• 2 large red onions, chopped

• 4 cloves garlic, minced

• 2 carrots, chopped

• 2 ribs celery, chopped

• 10 mushrooms, sliced

• 3 lbs beef (stew meat or brisket), cubed

• Salt & pepper

• 2 tbsp flour

• 1 sprig rosemary

• 4 cups (2 cans) Guinness or stout

• 1 cup shredded cheddar (optional)


For the pastry:

• 1½ cups flour

• 2¼ tsp baking powder

• ¾ tsp salt

• ½ cup cold butter, diced

• Ice water

• 1 egg yolk (for brushing)

👩‍🍳 Instructions

1. Preheat oven to 375°F.

2. In a large oven-safe pot, melt butter over medium heat. Add onions & garlic and cook until soft (about 10 mins).

3. Add carrots, celery, mushrooms & remaining butter. Cook until softened and moisture cooks off (about 15 mins).

4. Season beef with salt & pepper. Add to pot with flour and rosemary. Cook on high heat for about 5 minutes.

5. Pour in Guinness—just enough to cover the meat. Cover and place in oven for 1½ hours. Stir, then return to oven for 1 more hour until tender.

• If needed, simmer on stovetop to thicken

• Stir in cheddar if using

6. Make the dough: Mix flour, baking powder & salt. Cut in butter until crumbly. Add ice water until dough forms. Wrap and chill for at least 2 hours.

7. Roll dough out and place over stew in a baking dish or keep in same pan. Seal edges, cut slits, and brush with egg yolk.

8. Bake for 45 minutes until crust is golden brown.
